Smile...
Today is a tough day. Today, June 3rd, is the 2ND anniversary of my dad's death. I miss him so much. It's been a while since I've cried thinking about him. It's gotten a bit easier, I guess. But I still miss him. Some times, at the most randomest moments, memories of the day that I received the phone call that changed my life forever, pop into my head. But most times, I am thinking about the memories I have of him. The funny things he did to make me laugh. The sacrifices he made for me, my brother and my sister. Just the little things that made him so special.
Gosh, I really do miss him.
I'm not in the mood for much blogging so I'll just tell you that I had a very good day with my eating on Wednesday. And I finished off the day with a great workout.

Staying on track...
But it's not impossible. Yesterday was proof of that. Well, almost.
The morning started off great. I had my turkey and tomato sandwich and then I threw in a banana. I drank my 16 oz. of water. I was feeling good. As I got closer to lunchtime, I could feel those snacking urges kick in. But nope, I waited until lunch and had a delicious serving of red beans and rice with an apple. I also polished off my second glass of agua. It started getting a little tougher as the day wore on. I got to eat my yummylicious snack of yogurt, berries and almonds. But that wasn't holding me over until I got home. So, my eating took a turn for the worst by me consuming some Nutter Butters, then some animal crackers, and finally some cheddar cheese rice cakes. Now, of course, I'm exaggerating and they were the mini kinds and I ate, maybe, only like 5 of each (except for those nutter butters!!). Although, I went off my path for a bit I finished the day out right with a healthy dinner and the rest of my water.
And there was no soda involved.
It also helps that I had an uhmazing workout. I finished up my night at the gym with some steam room time and I was walking on cloud nine. The steam room is heavenly. If you have one at your gym (or better yet, your house) and you haven't tried it, you are seriously missing out.
Although, my day wasn't perfect, it sure was good enough. For me, anyway. Besides, who wants perfect? I like a challenge.

Monday

Wow, I could honestly say it was a pretty excellent day.
The boyfriend and I stayed so long at the gym because we had our fitness assessment with a personal trainer. Now I'm not sure if it was because...well, I don't really know what it was, but I was not feeling the trainer. He really didn't sell me on his services. First off, he did not give us his undivided attention. There were so many distractions and it was just so impersonal. Not a great way to sell yourself, buddy. Plus, he didn't really tell me anything I didn't already know. I can't judge all personal trainers off this one incident but I'm not sure they are for me. We scheduled a workout session for the weekend, so maybe he'll change my mind. But as of right now, a personal trainer is a no-go.
My workout consisted of 15 minutes on the elliptical and 30 minutes on the treadmill. And I am happy to say, I have started jogging. Yes, people, I have started jogging. All 255 pounds of me was jogging on that treadmill. I seriously thought I was going to break something. I only did 2-3 minute intervals with lots of walking in between but whoa!, that was good enough for me. I also got in some chest, bicep and back exercises on the weight machines. I don't know how well I'll do with the machines. I am super self-conscious so I'm not that comfortable working out in front of tons of people. I don't think that'll help me get a more efficient workout. I have to think about what I'll be doing on the strength aspect of my regime.
After, 2 days at the gym, I feel great. My legs are a bit sore and stiff, but it still feels awesome. Joining the gym has got to be one of the smartest things I have done this year!

Completing 2 weeks of consistent workouts feels AMAZING. I really am seeing a difference in my arms and legs. I have yet to see anything in my tummy but I'm guessing that's where the fat is going to go last. =/
I caught a glimpse of myself in the mirror and got a bit discouraged. I have such a long way to go. It's frustrating. I think I am working hard and it's just depressing to think that I may not see results for a long time.
Woe is me.
I just have to take it one day at a time. This is going to be a true test of my patience. I hope this weight doesn't defeat me once again. I'm way too old and I've been like this for way too long now.

So, working out Mon-Fri didn't work out too much. I'll have to get a workout in on Saturday or Sunday. It's going to be tough working out this week because the boyfriend is super sick and can't work out. I always get lazy when he doesn't work out with me. It sucks not having your exercise buddy =(. I'll just have to try not being a weenie and do the workouts on my own.
My eating hasn't been too bad either. True, I did go a little snack crazy on Wednesday, but overall I've had some good days. So far, I have stuck to the sugary stuff (soda) once a day. That's a great feat my friends. I used to drink that stuff as if it were water. So bad for me. I know I'm being a tad healthier drinking it just once a day. Not 100% healthy, but healthier.

Mon - 20 min HIIT, arms and abs
20 minutes wasn't much, but it was something and I got a great sweat out of it. For some reason, the boyfriend and I get really lazy on the weekend. We are going to concentrate on getting a workout Mon-Fri and not so much on the weekend. I think 5 days a week of workouts is a good thing.
Hooray for semi-good eating. Yesterday, I planned out all my meals and with a few non-planned items, I have to say it was a good day. I only had soda ONCE! And it wasn't even that much, maybe about 4 ounces. Soda is so my downfall every time. I love the stuff. But Dr. Oz says you should treat soda like a dessert. And you don't have dessert all throughout the day. You have it once. So, soda once a day isn't so much a bad thing. And maybe one day, it'll be once a week. But right now, I'm just working on not drinking it a gazillion times a day. Baby steps, my friends.

Wow, I am on a roll. 3 good days in a row!
I ate all of my planned meals. I did eat 3 cookies that weren't planned, but hey, I've been doing so good. I deserved a treat.
Ramp It Up was my workout. One more week on Ramp It Up and then it's on to Burn It Up. Oy vey, I am not looking forward to that.

1. I went to Wal-Mart yesterday to pick up some groceries. I hadn't eaten lunch yet. In the check out line, the Reese's PB eggs were calling out to me. So were the million other treats that are stocked in the end lanes. I contemplated buying one for a bit, but didn't give in. I kept on snapping my gum, paid for my purchases and was on my way. That's a big deal for me because I'm a sucker for anything chocolate. I'm a sucker for anything CANDY!
2. There is this blouse that I scored on my day of awesomeness at Old Navy about a month ago. Well, I hadn't worn it because it was a bit snug in the tummy area and the buttons looked like they were going to pop off. Guess what I'm wearing today? Yes! The same blouse that didn't fit me a month ago, fits me nicely now! Woo hoo!! All that working out is paying off!

I'd put myself first and make the rules as I go
My eating was 100% on plan. I ate everything I had planned to eat and nothing else.
I got my workout in. Ramp It Up once again. It is definitely getting easier and easier.
And I cooked last night! I made the awesomeness that is Gina's Lighter Eggplant Parmesan.
Ok, ok, I know mine looks like a hot mess and looks nothing like Gina's but that's only because I don't know how to serve a lasagna correctly. But trust me...this stuff is a very big AWESOME. The boyfriend gave it a 10 and his parents ate it all up (and they had an extra serving!). I love Gina's! All the recipes I've tried from there have been huge successes. Through the storm we reach the shore
I cooked dinner last night to give my boyfriend's mom a break. Plus, her cooking has been pretty blah lately. So, I was way too tired to get in my elliptical workout. But I did do Slim in 6. Today is my 6Th and last day on the first level of Slim in 6! Tomorrow, I start Ramp It Up and let me tell you, I am not looking forward to it.
RECIPE
I found this recipe in an issue of Cooking Light (October 2009). Now, you know I only try the things with inexpensive ingredients and easy ones. This recipe was cheap and super easy!
Chicken with Lemon-Caper Sauce
4 (6 ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons all-purpose flour
2 tablespoons butter
1/2 cup fat-free, less-sodium chicken broth
1/4 cup fresh lemon juice
2 tablespoons capers, drained
3 tablespoons minced flat-leaf parsley
1. Place chicken between 2 sheets of plastic wrap; pound to an even thickness using a meat mallet or small heavy skillet. Sprinkle chicken evenly with salt and pepper. Place flour in a shallow dish; dredge chicken in flour.
2. Melt butter in a large nonstick skillet over medium high heat. Add chicken to pan; cook 3 minutes. Turn chicken over. Add broth, juice, and capers; reduce heat to medium, and simmer 3 minutes basting chicken occasionally with sauce. Sprinkle with parsley; cook 1 minute. Remove chicken from pan; keep warm.
3. Bring sauce to a boil; cook 2 minutes or until thick. Serve over chicken.
Yield 4 servings (serving size: 1 breast half and 1 tablespoon of sauce)
Nutritional Info
Seriously, this recipe was super easy and super yummy. The chicken came out very moist and flavorful. The only thing I would do different is once I've cooked one side of the chicken, I would turn it over and cook for 3 minutes, then add the liquids and capers. I followed the recipe and added the liquids right after turning over and the chicken did not cook all the way through so I had to cook it separately from the sauce for a bit. I also used dried parsley instead of fresh. It still came out awesome!

Is this a simple case of déjà vu
Yesterday, I read a post by a blogger saying that their workout felt like it was getting harder. I left a comment saying something like my workout only feels harder when I skip a day. I definitely spoke too soon. The workout yesterday was a killer! My legs were feeling it big time and it seriously felt like the machine was set at the highest tension. It wasn't. Everything was how I normally do it. I guess that's what I get for opening my big mouth lol.
My eating was about 85% on point. I stopped at Target during lunch and indulged in the awesomeness that is their popcorn combo. How could I resist? You get a drink and a popcorn for $1.50! I love me some popcorn. That was my only bad snack for the day. Everything else was relatively healthy and in my plan for the day.
Kudos to me.
Dear Boyfriend,
I wanted to thank you for making me breakfast these past couple of weeks. You don't know how much they have helped me stay away from McDonald's or Burger King. You are very much appreciated.
But this morning, something changed. This morning, my sandwich was missing. I blame FIFA. I know I told you I would eat an oatmeal at work. My oatmeal is still in the kitchen pantry. So I was forced to pick something up.
I hope you know my breakfast fail was all your fault.

It never really mattered too much to me
My eating was 100% on point. I ate everything that I had planned to eat. There were no detours on the way home. You don't know how badly I wanted to stop at a Wendy's yesterday after work. Their Value Menu was calling out to me. But I was planning on making an apple upside down cake (courtesy of cooking light) so I just decided to let a slice of that be my treat for the day. So no hamburger or nuggets for me. That battle was won, but the war goes on.
I got in my 30 minutes on the elliptical machine. Instead of doing the 5, 2.5 minute intervals, I changed it to 2, 1 minute ones. This really gets my heart rate up. It's one minute less on the fast speed, but it sure feels like a more tougher workout. I think I'll stick to this set-up for a bit.
Even though I have been eating right and working out, I feel a bit fluffy. I'm thinking it has to do with my pal. I hate this feeling. It's a bit disappointing after all the hard work I've been putting in. I have to remember that it'll be gone in a couple of days. Sometimes, I hate being a girl (not really).
The boyfriend thinks I should stop blogging for a bit. He thinks it distracts me from doing what I have to do to lose weight. Like the majority of the time, I think he's wrong. Blogging has helped me stay accountable. Plus, they're are so many supportive and motivating bloggers that I have come across. It might sound weird but sometimes I eat good and workout just to not let YOU down.

Monday, Monday it was all I hoped it would be
I have been in such a great mood lately. And I think I know why. It's because I got to wake up one more day to my awesome little family. And because I've got food to eat, a roof over my head and a job to go to. I am so, so grateful for all of my little blessings.
I took a rest day on Friday. That's allowed. I continued on Saturday and Sunday with HIIT on the elliptical machine for 30 minutes.
I'm pretty proud of myself. It has been a long time since I have had one week of consistent exercise. I think the longest I've ever gone was 2 or 3 weeks. I'm really trying to break that record. I'm 33.333333...% done.
I didn't get to weigh in this morning. I was running late and totally forgot to. I have been peeking at my weight this week and it doesn't look really hot. But my little pal is in town so that could be why I'm not happy with what I was seeing. I guess I'll just skip this week and weigh-in next Monday.

No more bread and butter, no more toast and jam
I did get my HIIT on the elliptical machine. And I did the intervals properly. In regards to timing, I did use the 2:1 ratio. 2.5 minutes of warm-up, 5 minutes high speed, 2.5 minutes slow down, 5 minutes high speed, etc., etc. for 30 minutes. Let me tell you, this is a MUCH better workout. I feel like I'm dying those 5 minutes but after a bit of a recovery I'm ready for the next 5 minutes and ready to feel like dying again. It's great!
I finally got some cooking in this weekend. And all three meals that I put together were a success.
The first meal I cooked was lunch on Saturday. I decided to go with Pasta Fagioli from the awesomeness that is Gina's Weight Watchers Recipes (Oh gawd, I just saw these little suckers. They look so good!! I'm going to have to try these soon.).
I'm not really one for soups but this looked good so I decided to try it. It was super easy to make and it came out super yummy. I paired it with a turkey and swiss panini and it made for a nice lunch. My household was pretty happy with it.
The next thing I made was lunch on Sunday. Now I don't know if this is really considered light food. After all, one chicken leg is about 200 calories (that sounds good to me calorie wise, but might seem a little high for some). The reason that I'm mentioning it is because the marinade is excellent and I'm sure it would go great on some chicken breasts. So I present to you Colombian Style Roasted Chicken Legs (courtesy of My Colombian Recipes).
These are next day. I wish I would have gotten a pic when they were right out of the oven. They looked heavenly!Ingredients
(Serves 4 to 6)
12 chicken drumsticks, skin on
Cooking spray
5 scallions, chopped
3 cloves garlic
½ cup chopped white onion
¼ cup fresh cilantro
1 tablespoon fresh thyme
1 tablespoon ground cumin
1 tablespoon paprika
Salt and pepper
2 tablespoons white vinegar
Directions
1. In a food processor, place the scallions, garlic, onion, cilantro, thyme, vinegar, cumin, paprika, salt and pepper. Process to a paste.
2. Place the chicken in a zip –bag and add the marinade. Move around to cover evenly. Refrigerate the chicken overnight.
3. Cover a baking sheet with foil and coat with cooking spray. Position an oven rack in the center of the oven and heat the broiler to high.
4. Place the chicken legs on the baking sheet. Broil for about 10 minutes and turn the legs one time and cook for 12 to 15 minutes more or until the chicken is cooked and the skin is browned. Let it rest for 5 minutes and transfer to a serving plate.
I didn't use thyme and I used parsley instead of cilantro, but these chicken legs still came out Oh-so-good!
*The other meal was Waffles with Strawberry sauce but they were in no way waist-friendly, so I won't talk about them anymore. They sure were good though!

She's Got It Out For Me But I Wear The Biggest Smile

Monday was a great day. I ate most of what I had planned to eat. There were a few discrepancies, but hey, I ate no fast food and drank no soft drinks. Those are two of my BIGGEST weaknesses, so any day without them is an AWESOME day in my book.
My workout was HIIT (Thank you Karen!) on the elliptical. It was the WoA (Workout of Amazingness) divided in half. I've decided to just concentrate on cardio this week. I'll probably start up again on the weights next week.
By the by, I just wiki'd HIIT. Now I know how to properly time my intervals. Tonight's workout should be very interesting.

I want your love and I want your revenge
My eating went really well yesterday. I ate way less than I have been eating lately. This past weekend me and the boyfriend did some major damage. Hibachi dinner one night. And twice out to eat Mexican food (If you have never eaten at On The Border, you must try their Dos XX Fish Tacos). After all that food, I was ready to start a little bit healthier eating. And I did. I did allow myself a treat though: some Haagen Dazs ice-cream and 2 mini snicker bars. Like I always say, moderation is key.
Okay, enough about weight loss.
Remember when I said I needed to be more organized? This is what my bathroom vanity looked like before:

I simply adore Old Navy. They have great prices and their clothes fit. Being a fluffy girl, it's hard to find clothes that I feel comfortable in. And Old Navy clothes fit me nicely. Don't get me wrong, there are clothes at Old Navy that I look hideous in, but the majority of the time, they really work out well. So I headed over to Old Navy on my lunch to use up this gift card I got for X-mas. I scored 7 shirts for 27 bucks*!! I am so proud of myself. I only shopped the clearance section and I had a 20% off coupon that I got from here (check this site out weekly for some great coupons). Being fat and being a tightwad is not a great thing. Big girl clothes can be way overpriced (*cough* Lane Bryant *cough*). But I feel like I can get a great shopping fix from my dear friend, Old Navy.
*This may not sound like such a big deal to some, since I have heard of people getting even better deals, but I had just spent 20 bucks on 2 shirts from Kohl's, so understand my excitement over my 7 for 27 deal. (Yes, those Kohl's shirts are going back.)

No workout
My eating was way better but I still didn't get a workout in. I had to go take care of some business downtown and there was so much traffic. Driving in traffic makes me really lazy for some reason. So I got home late and I was exhausted! I was in such a pissy mood. Looks like I won't be going downtown for a LONG while.
I know there is going to be a gain this Sunday. And I still feel a bit fluffy. It doesn't help that my jeans were just recently washed and they feel super tight.
I. Can't. Breathe.

I wouldn't necessarily call it an off-challenge day. Except for that cake that I hadn't planned on eating and only getting in 20 minutes of exercise. That sweet tenant brought in some cake that she had made. She is the sweetest, but God is she killing me!! I know I can just not eat the stuff she brings in, but that would just be plain RUDE, right? And for the exercise, I waited to long to get moving. I got home, relaxed, ate dinner, watched The Vampire Diaries, and then decided to work out. Well, I got hot and uncomfortable and gave up after 21 minutes.
I really blow at challenges.
But you know what? It's okay. Because I stepped on the scale this morning and it was down!! It doesn't count until Sunday morning, but I know if I continue what I'm doing (eating less and working out), I will definitely have a loss this week.

I watched that movie "Up" last night. I thought it was so cute! If you watch it, get a box of Kleenex ready. It had me tearing up in the first 10 minutes. Lovely message and a lovely movie overall.
Beauty Post
I was looking like death this morning. My face looked really sleepy and just out of it. You know what I can always count on to brighten my face and make me feel good?
It's so good to know that all it takes are these three little things to pick me up. I never wanted to be one of those people who needs to put on all this make-up to look normal, and then look like crap when I don't have any on. Don't get me wrong, I love make-up and I can wear quite a bit when I'm going out. But it's nice to know that all I need is an eyelash curler, mascara, and some lip gloss to make me feel human. And come on, it doesn't hurt that looking good makes you feel good, too.

Day 2 (Can I get an OH YEAH!)
Breakfast: turkey sammich (turkey, light mayo, tomatoes)
Lunch: a sweet tenant of mine brought lunch for us today - Jambalaya. I had never had this before and it was effin' awesome. I have definitely got to try making this some time.
In between: apple, 2 slices of turkey, Flax granola bites
Dinner: 2.5 chicken wings, small scoop of shrimp fried rice
The food I had eaten wasn't really what I had planned to eat, but you should have seen the portions I had. I was sooo good. I had about a cup of jambalaya at lunch time. And for dinner, it was only about half a cup of fried rice. Wow, I never watch my portions. Seriously guys, I am being so good, it's scary.
I did get my 30 minutes on the elliptical in. I really had to push myself to get on the thing and do it. But man, those 30 minutes flew by and I was laughing at myself for making such a big deal of doing it or not. That's how it goes, though.
I know it has only been two days, but I see myself thinking twice about what I'm going to eat. Me and the boyfriend went shopping last night for a gift for my nephew. I was starving! We could have easily stopped at the food court for something to eat (I was so craving pretzels!), but I told myself to wait until we got home to eat dinner. We stopped at Walgreen's to get a movie from my beloved (Redbox) and I was still starving, so I went on the prowl for a snack. Instead of chips and candy, I picked up some granola bites. Gosh, I am a new person.

Me and the boyfriend watched "The Ugly Truth" last night. I liked it. And I love Gerard Butler! If you like crude humor, then you'll like this. Me and the boyfriend laughed a lot. He gave it two thumbs up.

At Walgreen's last night, I picked up some of these:
Now, I don't have any experience with Flax; I've never tried the stuff. However, after trying this I'm not sure I want anything more to do with it. This stuff literally tastes like dirt. It even looks like discs of it:
I just didn't really care for the taste. Is this what healthy food tastes like? No wonder I am fat. Just kidding. I guess they really aren't that bad. For 130 calories per serving (about half a bag), they're pretty filling and I'm sure that they are really good for you. Just the taste of them really bothers me. Why is it that all the food that is good for you tastes really bad? Have you guys tried any good for you food that is also good for your taste buds?

Challenge: Day 1
Breakfast: oatmeal, apple
I was thisclose to messing up my week. I was running late and didn't have time to make breakfast. On my way into work, I was thinking I would just stop somewhere to pick something up (read: french toast sticks from Burger King). But I held fast, and just decided to eat what I had brought for lunch and then grab a salad at the grocery store. Thank you Lord Jesus, that there was a packet of oatmeal in my desk. I added a cut up apple to the mix and I was good to go.
Lunch: rice, hamburger (meat only), potato and veggie salad
In between: I had a tangerine but ended up throwing it out because it tasted scary; I was starving when I got home, so I had 2 slices of turkey
Dinner: rice, lentils, hamburger (meat only) (thank God they are finished!!), avocado
Dessert: piece of pineapple cake
Drumroll, please:
Workout: 30 minutes on the elliptical (I'm awesome, right?) I have really missed sweating buckets.
So my Monday was pretty good. Screw it, it was freaking awesome! I'm so glad I didn't eat junk food or fast food and that I got my workout in.
