the walking dead

That's me. My eyes are on fire. I don't know why either. I went to bed at 12ish last night and didn't wake up until 7:10 this morning. 7 hours of sleep isn't bad at all and more sleep than I get some nights, so I'm not sure what went wrong. I can't wait to get home and take a quick nap before tonight's festivities.

On with the workouts!

I'm doing very good on getting my workouts in. I need to start working on my eating. Monday night, the fluff was on full force. I can't even remember what I ate to feel like that. Oh yeah. The boyfriend's mom cooked some arroz con pollo and I remember it tasting a tad too salty. Wow. I know salt brings on the water retentions, but I had never really felt the after effects of too much salt until that night. Seriously, my stomach felt stuffed to the brim. Must stay away from the salts from now on.

I also bought a Snickers bar for 90 cents yesterday. WTF? 90 cents for a candy bar?!?! What happened to 3 for $1? Not only is junk food bad for ME, but it's bad for my wallet. Again, I have to start working on not buying snacks.

Last night, the boyfriend and I watched The Biggest Loser. It's been a while since I have diligently watched this show. And now I got my boyfriend into it. It's funny to hear him say "man, I can do that easy!" when watching the challenges the contestants participate in. Well, of course you could Sweetie Pie!! You're little ass is only carrying 5, 10 (at most) extra pounds. I bet you wouldn't be saying that if you were 200 pounds overweight. He tries, but I know he will never truly understand what it's like to be really overweight.

P.S. It was so funny to see Jillian's reaction when Tracey lost 11 pounds that week. LOL! She sure showed her!! I don't need no stinkin' trainers!!!

Happy Monday to all!!

I dislike Mondays but I'm alive and well so I shouldn't be complaining!

I have been so obedient with my workouts (with the exception of a couple of missed ones).

I missed a little too many days but still managed to lose 1.6 pounds. Wow, it only took me 3 weeks to lose 4 pounds. I guess I can't complain because at least I'm going down and not up. Although, there isn't much action on the scale, I'm really looking forward to measuring myself. I can feel my waistline shrinking a bit. And I haven't felt that fluffy feeling in quite a while. I'm anxious to know where I stand on the inches aspect.

Happy 1st Day of Fall!!

I love the fall. That means Halloween (my favorite day!!) and Thanksgiving are just around the corner. And that means SWEATER SEASON is here!! Yay! Fall has got to be one of my favorite seasons.

But with the fall comes this ugly weather. It has finally stopped raining here. But this dryness will be short-lived because the newspeople say it'll rain intermittently throughout the day and some storms are on their way in. Ugh, I don't know if the roof at my job can take much more. There are leaks everywhere!! I'm afraid the ceiling is going to come down around me in the next day or so.

I finally completed the first level of Slim in 6. I moved on to Ramp It Up last night and literally got my ass handed to me. The workout was BRUTAL. But that's the best kind there is, right? I sure did feel super-great when I was done because I know I got a good workout in.

My eating was pretty good yesterday. I didn't really eat anything I wasn't supposed to. Not having money probably contributed to that but I guess that's a good thing. I need all the help I can get and I'll take it even if it means no moola in my pocket.

Monday Mayhem

It is raining like ca-razy here in my neck of the woods. Street flooding and closures everywhere. However, my drive into work was pretty uneventful. Que blah.

I've been very good this past week on working out. I had just a couple of days off but I think I did pretty good.

I still really need to work on my eating. I have been eating too much crap. That is why there was only a 1 pound loss this week. But like I always say a loss is a loss is a loss (I don't know why I have to say it three times, it just sounds nice). I am definitely feeling a tad smaller in the belly area. And this morning while I was looking at myself in the mirror, I can see the beginnings of a waistline. Gosh, haven't seen one of those in awhile.

Recipe time!

I came across this recipe while perusing the October issue of Cooking Light. Usually, I don't like these recipes because they call for a lot of ingredients. And with being on a super strict budget, I have to be very choosy on the recipes I try. Since I had most of the items on hand I decided to try this one:

Adobo Chicken
1 tablespoon canola oil
8 bone-in chicken thighs, skinned
2 cups chopped onion
5 garlic cloves, minced
6 tablespoons low-sodium soy sauce
3 tablespoons water
3 tablespoons white vinegar
2 tablespoons honey
1/2 teaspoon black pepper
1 bay leaf
3 cups hot cooked long-grain rice

1. Heat oil in a large nonstick skillet over medium-high heat. Add chicken to pan; sauté 4 minutes on each side or until browned. Remove chicken from pan. Add onion to pan; sauté 3 minutes. Add garlic; sauté 1 minute, stirring frequently.

2. Return chicken to pan. Add soy sauce and next 5 ingredients (through bay leaf); bring to a boil. Reduce heat to medium; cover and cook 12 minutes. Uncover and cook 20 minutes or until chicken is done and sauce thickens. Discard bay leaf. Serve over rice.

4 servings (2 thighs and about 6 T of sauce)

I personally thought it was very yummy. (I really wish I had gotten a pic) I loooved the sauce over the steamed rice. I did use only 2 cloves of garlic because one of the people I was cooking for isn't a big garlic fan.I also did goof and cook it over too high heat so it didn't come out as saucy as it should have. But the boyfriend still gave it a 9 out of 10. And his opinion is all that really matters <3.>

Happy Monday (very happy Monday)

Well, not really a happy Monday. I didn't get enough sleep last night. I stood up until 2 am just to watch American Pie on tv. And now, I am the walking dead this morning. I need more sleep!!

To recap this past week since I believe Tuesday was the last day I posted:

Sunday - rest day (my back was bothering me so I decided to rest)

My eating hasn't been the best but I don't really care because I lost some poundage this week. Yes people, I, Little Miss Fatty Pants, lost some weight. It was only 1.4 pounds, but still a loss is a loss is a loss. And with the way I have been going, I'm grateful for any kind of loss. Plus, I am mos def not feeling the fluff. And that's the best kind of feeling there is.

Day 2 (Take1,000,001)

Another day gone by.

My eating was atrocious; complete chaos.

But enough about that.

I just completed Day 2 of Slim in 6: Start It Up. My arms were KILLING me. But I got through it and, gracias a Dios, I survived.

By the by, if you are in serious need of a reality check, record yourself working out and then watch it. I did tonight to prove to my boyfriend that I did in fact work out. *shudders* It was very sobering =/.

P.S. Was anyone else kinda disappointed with Melrose Place??? I don't know about this one, it didn't really hold my attention. I kept switching back to Never Been Kissed! I'm hoping The Vampire Diaries isn't a let-down. I need something to watch now that True Blood is almost over.

Look who finally decided to post!

Me! That's who.

It has been a serious while since I was last here. I wish I had better news, but no dice. I am who I was a couple of weeks ago, plus a few pounds (I weighed in yesterday at 264).

Whatever. Doesn't mean I won't try again to get this right.

Monday (I very much enjoyed a day off from work.)
Breakfast: today was a day for sleeping in.
Lunch: hamburger on a whole wheat roll, grilled onions, tomatoes, slice of mozz, salsa rosada (ketchup and lite mayo a la colombiana)
Dinner: rice, red bean, piece of steak, 1/2 arepa
In between: 4 chocolate cupcakes (whaaaat??)

Workout: Slim in 6: Start It Up

Chugging on some water and now off to watch a couple of episodes of Buffy the Vampire Slayer!
